Garden Update: Baby Plant Cuties and Sautéing some Purslane

Everything in the garden seems to be thriving! We added what I think (???) will be the last planting, a couple buttercup squash seeds that will grow vertically next to the watermelon. In the image below from the front left we have kale, Swiss chard, more kale, broccoli, and Brussels sprouts. There’s a large sunflower growing at the front right edge. In the middle on the left we have herbs: “volunteer” mint, purple basil, sage, and Italian parsley. In the center we have three peppers: ghost, poblano, and Thai chili, in front of our rapidly growing purple string beans. Obscured but to the right of the beans and behind the zucchini are our two mounds with the two small butterbush babies growing. Towards the back from the left we have the future buttercup squash in front of the blooming watermelon vine and some snap peas that are hard to see (especially against our neighbor’s weedy garden…). To the right there’s a marigold, our San Marzano and yellow pear tomatoes, and another marigold. There are other marigolds, sunflowers, and cosmos hiding around the front and edges that can’t be seen.

After weeding out all of the edible purslane out of the garden after our trip to Illinois last week we sautéed them up and made delicious tacos with kidney beans, Trader Joe’s Roasted Tomatillo & Mango Salsa, and greek yogurt. Pictured: purslane in the skillet pre-taco.
